Soft, fluffy pitas are a regular part of meals in the Middle East.
Gather
• 7 1/2 cups flour
• 3 1/2 teaspoons dry yeast
• 3 teaspoons sugar
• 2 teaspoons salt
• 1 teaspoon baking powder
• 2 1/2 cups water
Go
1. In a large bowl, mix all dry ingredients.
2. Add water to bowl. Use your hands to combine water and dry ingredients.
3. Place dough on a floured surface and knead for 3-4 minutes.
4. Coat a large bowl with oil. Place dough in bowl. Gently rub oil on top of dough. Cover bowl with plastic wrap and let rise for 2 hours.
5. Divide risen dough into 8 equal sections. Shape dough into 8 balls. Put back in bowl and loosely cover with plastic. Let rise for a few minutes.
6. Place empty cookie sheet in oven. Heat oven to 475°F.
7. Roll each dough ball into a 7-inch circle.
8. Carefully place 3-4 pitas on hot cookie sheet.
9. Bake till slightly golden, 5-8 minutes.
10. Cool for a few minutes, then enjoy.
